Palkanji – Kerala’s favourite Rice Gruel
If you ask what I miss the most about Kerala, the answer is nothing else but ‘Kanji’. Kerala’s special rice gruel. Ideally with Green Gram Dry Curry, and Roasted Pappad. This comforting trio, is a staple in many Keralite households, offering a taste of home and health.
Rice Gruel, or Kanji, paired with Green Gram (Payaru) Dry Curry, isn’t just food; it’s a bowl of comfort for many. In Kerala, Rice Gruel is traditionally prepared with an array of rice types, including the robust ‘Kuthari’ (double boiled rice), the natural ‘Unakkalari/Pachari’ (raw rice), or the humble ‘Podiyari’ (broken rice) which is also avaiulable in store. However, it’s the Red Parboiled Rice, or Kerala Matta Rice, that’s most traditionally used, offering its unique flavor and nutritional benefits. We receommend Pavizham matta rice for this.
Recipe for Pal Kanjiyum, Rice Gruel with Milk and Accompaniments

- 1 cup Red Parboiled Rice / Kerala Matta Rice (for this recipe, we’ve used White Parboiled Rice)
- 4 cups Water
- 1 cup Milk (choose between whole milk or non-fat, based on your preference)
- 1/2 cup Freshly Grated Coconut
- Salt, to taste
